During a cooking session at Spearwood Library, on the 17th June, with Swan TAFE cooking teacher Theckla Weldt I learnt how to make an incredible savoury meal with semolina. It’s an Indian dish called Uppuma and is usually eaten at breakfast, snack or brunch. Theckla’s chicken curry was really tender, but for me the Semolina short meal stood out in terms of ease of preparation and unique taste and texture. Before this session I’d only used semolina as a cereal or in sweets such as galaktoboureko. This filling vegetarian meal will now become one of my staples.
