I love baking! I am so happy to announce that I will be sharing one of my favourite recipes with you every month. Hope you will enjoy the new recipe series.  My aim is to try all the recipes myself, and then to let you know which ones are great to make. (I will have a photo next time 🙂 I hope that you would also try them for yourself .The best part is, I will be using our own Library Cooking books. I will also provide a link the the relevant book. So, get in there and reserve a copy to try the recipe for yourself.

No-bake refrigerator cake

This recipe is taken from the book Chocolate

Serves eight
225 grams unsalted butter, diced
225 grams plain chocolate, broken into pieces
 55 grams glace cherries, chopped
 55 grams walnuts, chopped
 12 rectangular plain chocolate biscuits
1.    Line a 450 gram loaf tin with greaseproof paper or baking paper. Set aside.
2.    Put the button and chocolate into the top of a double boiler, or in a heatproof bowl set over a saucepan of barely simmering water. Stir constantly over a low heat until they have melted and the mixture is smooth. Remove from the heat and leave to cool slightly.
3.    Mix the cherries and walnuts together in a separate bowl. Spoon one-third of the chocolate mixture into the prepared tin, cover with a layer of biscuits and top with half the cherries and walnuts. Make further layers, ending with the chocolate mixture. Cover with clingfilm and chill for at least 12 hours. When thoroughly chilled, turn the cake out on to a serving dish.
